Carrot, Apple and Walnuts Muffins

I'm total hooked on the Showtime show Homeland. I'm not alone - Obama said he likes it as well! The story is tense and the acting is incredible, especially Claire Danes and Damian Lewis one-on-one is awesome; they both do deserve Emmy awards. While I was waiting for tonight's new exciting episode I was baking something calm and peaceful: wholefood muffins.

This muffins are really moist and have a crunchy topping, with a lot of nuts and other healthy ingredients. To make it even more healthy I use 1/3 whole wheat flour to replace the all-purpose flour and reduced sugar - it still turns out really yummy!





Preheat the oven to 350°F/175°C and spray oil to the muffin tin.

In a bowl, mix together the butter, flour and sugar. Rub with your fingertips until the butter is incorporated and you have a crumbly texture. Stir in the oats, seeds, water, oil and honey until looks like a wet, sandy mixture.

In a large bowl, whisk together the eggs, oil, sugar, vanilla, carrot, and apple. Fold in the nuts, raisins and coconut. Sift the flour, baking powder, cinnamon and salt together, and then gently mix into the wet ingredients. Don't over mix, or your muffins will be dense - don't worry if the batter is a bit lumpy.

Spoon the batter into the tins, then sprinkle the crumble topping on top of each. Bake for about 25 minutes; a toothpick inserted in the middle should come out clean.
